- 1 tbsp olive oil (more as needed)
- 3 medium carrots, chopped
- 2-3 potatoes, chopped
- 1 large white onion, chopped
- 2-3 sweet potatoes, shredded
- 1 can black beans, rinsed and drained
- 1 can chickpeas, rinsed and drained
- 2 tbsp cumin, ground
- 1 tsp oregano
- 1 tsp chili powder
- 1 tsp cayenne
- Shredded cheese
- Salsa
- Your favorite tortillas
- Heat oil in a skillet over medium heat.
- Cook and stir carrots until lightly browned, about 5 minutes.
- Add potato. Cook and stir until lightly browned and mostly tender, 5 to 10 minutes.
- Add onion and cook and stir until onion is lightly browned, 5 to 10 minutes.
- Add sweet potato, black beans, chickpeas, and spices and cook until sweet potato is tender, about 10 minutes.
- Serve on tortillas with cheese and salsa.
I generally don't measure the spices and just use them liberally.
