Veggie Tacos

Ingredients

  • 1 tbsp olive oil (more as needed)
  • 3 medium carrots, chopped
  • 2-3 potatoes, chopped
  • 1 large white onion, chopped
  • 2-3 sweet potatoes, shredded
  • 1 can black beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • 2 tbsp cumin, ground
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 tsp cayenne
  • Shredded cheese
  • Salsa
  • Your favorite tortillas

Cooking Instructions

  1. Heat oil in a skillet over medium heat.
  2. Cook and stir carrots until lightly browned, about 5 minutes.
  3. Add potato. Cook and stir until lightly browned and mostly tender, 5 to 10 minutes.
  4. Add onion and cook and stir until onion is lightly browned, 5 to 10 minutes.
  5. Add sweet potato, black beans, chickpeas, and spices and cook until sweet potato is tender, about 10 minutes.
  6. Serve on tortillas with cheese and salsa.

Notes

I generally don't measure the spices and just use them liberally.
