It seems that all of your courses are for 2021. Do you update your existing courses for each year? Or do you create new courses for each year? If I purchase your courses this year 2021, then should i expect them to be updated to next year automatically once we enter next year??

We make all new updates to the existing courses only. There is no need to purchase a newer version of the course each year.
