doc: requirements: Add pyserial

Since 7eaca45, pyserial is required for building docs because `DeviceAdapter` from the `pytest-twister-harness` plugin, which is imported by autodoc, now depends on it. Signed-off-by: Stephanos Ioannidis <[email protected]>
