Update CI configs to v0.3.4

Update lint scripts and CI configs.

Downgrade lucas-clemente/quic-go to v0.14.4

quic-go added github.com/francoispqt/gojay. Starting with v15.
This added an extra 700Mb to our dependency graph which is too much
for some users.

This is a temporary commit until we can find the right way to solve this

Set logger from factory (fixes pion#35)

Also fall back to default if none is passed by config.

Mass replace pions -> pion

Pions organization was renamed to pion
